Job Summary:

The Assistant Head Butcher supports the culinary team by preparing various cuts of meat, poultry, and fish in accordance with hotel standards. This role ensures high-quality, hygienic food preparation and contributes to the smooth operation of the kitchen.

 

Key Responsibilities:

  • Assist in receiving, inspecting, and storing meat and seafood deliveries.

  • Prepare and portion meats, poultry, and fish to specifications set by the Head Butcher or Chef.

  • Maintain cleanliness and sanitation of the butchery area, tools, and equipment.

  • Ensure proper labeling, storage, and rotation of all products to minimize waste.

  • Follow food safety regulations and hotel policies regarding hygiene and handling.

  • Sharpen and maintain knives and other cutting tools.

  • Support inventory control by reporting usage and assisting in stock checks.

  • Assist chefs and other kitchen staff as required during busy periods.

  • Adhere to HACCP guidelines and kitchen safety procedures.

Job requirements

Candidate Requirements:

  • Prior experience in a professional kitchen or butchery setting preferred.

  • Basic knowledge of meat cuts and butchering techniques.

  • Understanding of food safety and sanitation standards.

  • Ability to work in a fast-paced environment and lift heavy items.

  • Team player with good communication and time management skills.
