Job Summary:
The Assistant Head Butcher supports the culinary team by preparing various cuts of meat, poultry, and fish in accordance with hotel standards. This role ensures high-quality, hygienic food preparation and contributes to the smooth operation of the kitchen.
Key Responsibilities:
Assist in receiving, inspecting, and storing meat and seafood deliveries.
Prepare and portion meats, poultry, and fish to specifications set by the Head Butcher or Chef.
Maintain cleanliness and sanitation of the butchery area, tools, and equipment.
Ensure proper labeling, storage, and rotation of all products to minimize waste.
Follow food safety regulations and hotel policies regarding hygiene and handling.
Sharpen and maintain knives and other cutting tools.
Support inventory control by reporting usage and assisting in stock checks.
Assist chefs and other kitchen staff as required during busy periods.
Adhere to HACCP guidelines and kitchen safety procedures.
Job requirements
Candidate Requirements:
Prior experience in a professional kitchen or butchery setting preferred.
Basic knowledge of meat cuts and butchering techniques.
Understanding of food safety and sanitation standards.
Ability to work in a fast-paced environment and lift heavy items.
Team player with good communication and time management skills.
